Leftover Egg White Recipes: Low Carb Macaroons & Avocado Clouds

If you’re like me, Bob Evan’s Egg Whites are a weekly grocery staple, and its been that way since I decided to make better food choices nearly 7 years ago.  While I make no judgments about whole eggs – I buy those, too, by the way – I find that egg whites have been a more efficient and versatile ingredient in my diet.  From boosting the protein content of my veggie and fruit smoothies, to helping make my guilty pleasure meals like chicken fried rice much higher in protein and leaner, egg whites are integral to my diet.

WHAT TO DO WITH LEFTOVER EGG WHITES? 🤯😂

Anyone else understand this? You don’t really know what to do with the little bit that remains, but you know enough that you don’t want another omelette or scramble, at least for the moment anyway.  Today I got you covered!

That’s why I love these 2 leftover egg white recipes! They both have very few core ingredients, no more than 3, and are easy to customize to have different flavor combinations.  One sweet recipe, coconut macaroons, and one savory/fun recipe for weekend brunch, avocado egg white clouds!

3 INGREDIENT LOW CARB MACAROONS

Ingredients for 15 macaroons

  • Bob Evans Egg Whites, resting at room temperature
  • 2 1/8 cups unsweetened shredded coconut
  • 5 tablespoons xylitol OR Swerve
  • 1 teaspoon cinnamon or your favorite aromatic spice (OPTIONAL)

Steps

Step 1

Set oven to 400F.

Step 2

To a large bowl, use a hand blender (or by hand) to whisk egg whites until peaks form.  Note: try as much as possible to have very little to no liquid egg white remaining in the bowl.

Step 3

Slowly add coconut and xylitol, gently folding little by little using a spatula.  If desired, add the spices here or sprinkle on top before baking.

Step 4

Line a baking tray with parchment. Use an ice cream scooper or a spoon to carve out at least 15 equally sized mounds of coconut and place on the baking tray. Repeat until all the batter is gone.

Step 5

Bake for 12 – 15 minutes until the outside is golden and the edges are lightly browned.

Step 6

After baking left them first cool on the baking tray for a few minutes, AND then place in the  fridge to further cool down and harden.

Step 7

Store these in an airtight container in the fridge for 1 week.

AVOCADO EGG WHITE CLOUDS

Ingredients for 4 egg white clouds

  • Bob Evans Egg Whites
  • Avocado Mash
  • 4 tablespoons goat cheese crumble (OR feta)
  • 2 slices bacon, crumbled
  • Garnish
    • red onion
    • chives
    • hot sauce

Steps

Step 1

Set oven to 350F.

Step 2

To a large bowl, use a hand blender (or by hand) to whisk egg whites until peaks form.  Note: try as much as possible to have very little to no liquid egg white remaining in the bowl.

Step 3

Line a baking tray with parchment paper. Using a spatula, scoop out 4 large mounds of egg whites and place them on the baking tray, ensuring there is adequate space between them. Use a spoon to make a little indention or shallow hole in each one.

Step 4

Bake in the oven for 2 – 4 minutes, monitoring closely to ensure they do not burn. They will rise quite a bit, like a real cloud, and then flatten out more as they cool.

Step 5

Mix together ingredients for the Avocado mix. Season to taste with sea salt & pepper.

Step 6

Place the clouds on your plate. Add a generous portion of the avocado mix to the center where the shallow hole is.

Step 7

Add goat cheese, bacon and garnish!
