The addition of bacon and jalapeno provides the dish with a flavorful and spicy kick. With that out of the way, here is everything you will need to prepare this amazing dish and how to do it.
To begin with, you will need the following ingredients: half a cup of gluten free white sorghum flour, one whole egg, one egg white, one-eighth of a cup of unsweetened almond milk, half a teaspoon of baking powder, optionally you can add one packet of Stevia, one jalapeno but not too big, and lastly two tablespoons of bacon bits preferably natural and uncured without nitrates.
Now, to prepare this flavor bomb start with a large bowl. Put together the white sorghum flour and the baking powder. If you are planning on using Stevia, add it to the mix at this step. Once you place everything in the bowl, mix well until everything is incorporated. Set the dry mix aside and slice the jalapeno. If you want to reduce the overall heat, first slice the jalapeno in half and remove the seeds. Once you chop the jalapeno add it to the flour mix together with the bacon bits, eggs, and almond milk. Mix until the batter is thick enough but you can still pour it out.
For the next step, you can either opt for waffle makers or waffle irons. No matter what you choose, start by preheating in order to get golden and crispy waffles. All you have to do now is roll up your sleeves and enjoy!

Ingredients
- 1/2 cup white sorghum flour (gluten free)
- 1 egg
- 1 egg white
- 1/8 cup almond milk (unsweetened)
- 1/2 tsp baking powder
- 1 packet Stevia (optional)
- 1 small jalapeño
- 2 tbsp bacon bits (uncured, nitrate free, natural)
Steps
Step 1
Mix all dry ingredients together first in a bowl.
Step 2
Slice the jalapeño in half and remove all the white seeds. Cut into small pieces.
Step 3
Add eggs, milk, bacon & jalapeños to the dry ingredients and mix.
Step 4
Pour onto your waffle iron and cook until desired readiness.
Approximate macros for waffle batter for 1-2 servings.
