Chili Stuffed Sweet Potato

Saving money has never been easier with this comfort food. This meal is both filling and delicious with turkey chili and black beans stuffed in sweet potatoes. It even helps you build muscle if you workout since it is packed full of protein and complex carbohydrates. Now, let’s get that chili stuffed sweet potato!

Cooking

The first thing you have to do is preheat your oven to 400F. While waiting, wrap 150g of sweet potatoes in aluminum foil and place them in a baking tray. Once the oven is hot enough, put in your sweet potatoes and bake for around 1 hour and 15 minutes. The time depends on the size and shape of your vegetable so be sure to check it from time to time. You want it to come out soft in the center.

For the filling, get a skillet and put it over medium heat. Once warm, pour in 6oz of extra lean ground turkey then season it with 1 tablespoon of McCormick low sodium chili seasoning. You can also add in a bit of Mrs. Dash Chipotle seasoning. When the meat is almost cooked, add in a 3/4 cup of diced Roma tomato, 1/8 cup of low sodium black beans, and 1/8 cup of green onions. After mixing them together, turn down the heat and cover the skillet. Let it cook for another 5 to 8 minutes.

After your sweet potatoes finish baking (remember to be careful when peeling the aluminum foil off as it may be very hot), slice each into two equal pieces. Then, scoop out a shallow hole in the center to make space for the filling. Once done, top it with your turkey chili and enjoy!

Chili Stuffed Sweet Potato

Ingredients

  • 6oz extra lean ground turkey
  • 150g sweet potato (baked)
  • 3/4 Roma tomato (diced)
  • 1/8 cup low sodium black beans
  • 1/8 cup green onions
  • Seasonings: 1 tbsp McCormick low sodium chili seasoning, Mrs. Dash Chipotle seasoning (optional)

Steps

Step 1

Bake a sweet potato in the oven until soft.

Step 2

Set a skillet on medium heat and add ground meat .

Step 3

Chop the meat in the skillet with a spatula and add seasonings while it is cooking. When the meat is 70% finished, add tomatoes, green onions and black beans. Mix together using a spatula.

Step 4

Reduce the heat to low, cover the skillet and cook for another 5-8 minutes.

Step 5

When the sweet potato has finished baking, slice it in half and scoop out just a little from the top to create a small hole.

Step 6

Top the sweet potato with the chili mixture from the skillet.
