Stuffed Avocados are great recipe ideas because it’s not only tasty, it’s a great way to add vitamins and healthy fats to your diet. Avocados are weight loss friendly food and they will keep you full until the next meal.

So, let’s start folks. Raw tilapia season with salt and pepper to taste, and add a little garlic and cumin to boost the flavor. Place fillets on a baking sheet and bake in preheated oven at 400F for 10 to 12 minutes. Cooking tilapia is really effortless because it won’t stick to your skillet at all.

The next step is preparing the avocado. First, slice in half and remove the seed. Then slice the inside of halves into cubes, and remove it with a spoon. Add them to a bowl and add other ingredients too. Place black beans, corn, and pico de gallo in the bowl with avocados.

Chop tilapia into a small bowl using a fork and add it to the bowl with the other ingredients. Season with sea salt and pepper, and add some fresh cilantro and fresh lemon juice and mix. This stuffing is very a refreshing combination of veggies, avocado and fish, you’ll love it!

You can add any other ingredient you wish and customize it to your taste. It’s up to you. Instead of using tilapia, the amazing combination would be a tuna stuffed avocado or chicken stuffed avocado.

Tilapia Stuffed Avocado with Black Beans & Corn


* Optional Substitution Note
  •  5oz tilapia (measured raw)
  • 1/2 large Haas avocado
  • 1/2 cup black beans (cooked)
  • 1/3 cup corn (steamed)
  • 1 oz pico de gallo
  • fresh lime


Step 1

Either bake raw tilapia in the oven, OR use your cooked tilapia from your weekly meal preparation. If you bake in the oven, simply lightly season with sea salt, pepper, garlic and cumin.

Step 2

Slice an avocado in half and remove the pit. Slice the inside of the avocado horizontally & vertically to create cubes, and remove them with a spoon. Dice larger chunks into smaller cubes.

Step 3

In a bowl mix diced avocado, black beans, corn & pico de gallo. Season to taste using sea salt & pepper and fresh cilantro.

Step 4

Flake tilapia into a bowl using a fork. Toss it into the bowl with other ingredients and mix.

Step 5

Re-stuff the avocado or simply eat as a salad. Another great option is to pour it over a bed of fresh, raw spinach.
