Teriyaki Salmon Sliders Recipe

With each mouthful, the wonderful blend of flavors in the Teriyaki Salmon Sliders will entice your taste buds. Start by chopping the red cabbage, cucumber, and green onion thinly and placing them in a dish to make the coleslaw. Drizzle with a zesty combination of sesame oil, tamari or soy sauce, and orange juice, and then let cool in the refrigerator so the flavors can get the chance to combine. In the meantime, prepare a spicy mayonnaise by mixing Gochujang into reduced-fat olive oil mayonnaise to add a little heat.

Then, to give the center-cut salmon pieces a delicious sweetness, marinade them in teriyaki sauce for at least 20 minutes. For convenience, you may toast the small brioche hamburger buns in the oven or on the stovetop until they turn golden brown. Heat a pan over medium-high heat. After the buns are nice and toasty, remove from the pan and sear the marinated salmon skin-side down in the same skillet until it comes off easily and reaches the doneness you want.

Place a good amount of the coleslaw and a piece of skin-on salmon on the bottom bun of each slider, then assemble the sliders by spreading a dollop of hot mayo on top. The harmonic balance created by the contrasting flavors and textures of the crisp coleslaw, creamy mayo, and soft salmon will leave you wanting more. Teriyaki Salmon Sliders Recipe

Ingredients

  • 8 mini brioche hamburger buns (or bun of choice)
  • 1lb center-cut (wild) salmon, divided into eight 2oz pieces
  • 1 tablespoon teriyaki sauce
  • Spicy mayo (optional)
    • 4 tablespoons reduced fat olive oil mayonnaise
    • 2 tablespoons Gochujang
  • Slaw
    • 1 ½ cups thinly sliced red cabbage
    • 1 medium cucumber, thinly sliced (vertically – see pic)
    • 1 green onion stalk
    • Juice from 1 medium orange
    • 2 tablespoons low sodium tamari or soy sauce
    • 1 tablespoon sesame oil

Steps

Step 1

In a bowl, toss together the ingredients for the slaw then set aside to chill in the fridge.

In another small bowl, mix together the ingredients for the spicy mayo, then set aside to chill.

Add 2oz salmon pieces (skin on) to a bowl, add 1 tablespoon of teriyaki sauce and rub the sauce all over the salmon, then set aside to marinate for at least 20 minutes in the fridge or overnight for deeper, richer flavor.

Step 3

Set a carbon steel or cast iron skillet on medium-high heat.

Step 4

Slice the buns in half.  Lightly spray with olive oil and if desired, lightly sprinkle with garlic powder.

Once the skillet is hot, add the buns face down in the skillet.  Toast for 3 – 5 minutes or until the edges have lightly browned.

Alternatively, set oven to 350F/177C.  Slice the buns open and spray with oil.  Then place them in a baking tray face up.  Place in the oven and toast for 3 – 5 minutes or until browned/toasted to your liking.

Wipe the pan clean if needed, spray with oil then add the salmon skin-side up. As the salmon sears monitor the heat of the pan to ensure it is not too hot and burning.  Leave the salmon untouched in the skillet until it is easy to lift off the pan using a spatula or tongs, about 4 – 5 minutes.

Cook salmon for an additional on each side for 2 – 4 minutes, or until you reach your desired level of doneness (done, medium).

Bring it all together and build the sliders! Add a little spicy mayo to the bottom bun, peel off the skin of the salmon then add it to the bun.  Top with a little slaw.
