Eating healthy can be very boring and to be quite honest tasteless in most cases. Implementing variety and different flavors is a necessity so you can enjoy your fitness journey and eat healthy flavorful food. With these teriyaki chicken skewers, you can enjoy a flavorful and healthy meal in less than an hour. Stop making plain chicken skewers. Grilling chicken the same way every time, honestly, it can get boring really fast. Well, with this recipe you can kiss that boring flavor goodbye. Now, if you are ready, let’s do some cooking.
For this recipe, which can serve four people, you are going to need one pound of chicken breast or chicken thigh if you prefer so. Now, for the homemade teriyaki sauce you are going to need the following ingredients: juice from a lime, one tablespoon of arrowroot starch or if you cannot get that you can also use tapioca starch, three tablespoons of organic raw honey, half a tablespoon of minced garlic, one tablespoon of red chili paste, half a cup of Bragg Liquid Aminos, and one teaspoon of apple cider vinegar. For garnish keep it simple with sesame seeds and fresh green onions.
Now, to start with, set the oven to 400 degrees Fahrenheit. Take the wooden skewers and soak them in water for 15 minutes. While you wait for the skewers to soak, slice the chicken into long strips. In a separate bowl mix together the ingredients for the teriyaki sauce. Add the chicken to the bowl and let marinade for at least 20 minutes. Put the chicken on the skewers and place them on a baking sheet. Pour the remainder of the sauce on the kabobs. Bake them in the oven for 10 minutes before turning them over and basting them with the sauce again and baking for another 8 to 10 minutes. When done garnish with sesame seeds and green onion and dive right in and enjoy this flavorful dish!
Ingredients for 4 servings:
- 1 lb chicken breast
- Juice from 1 lime
- 1 tablespoon arrowroot starch (or tapioca starch)
- 3 tablespoon organic, raw honey
- 1/2 tablespoon minced garlic
- 1 tablespoon red chili paste
- 1/2 cup Bragg Liquid Aminos
- 1 teaspoon apple cider vinegar
Garnish: sesame seeds, fresh green onion
Set oven to 400F.
Soak wooden kabob sticks in water for about 15 minutes prior to adding chicken.
Slice chicken breast into several thin, long strips.
In a bowl, mix together all of the ingredients for the sauce.
Add pieces of chicken to the sauce and allow it to marinate for 20 minutes.
Skewer the pieces of chicken breast with wooden kabob sticks, then place the kabobs in a small (glass) baking dish or sheet.
Pour the remaining sauce over the kabobs and bake in the oven for 10 minutes.
After 10 minutes, remove from the oven and flip the kabobs over. Now, the sauce should be much thicker, so use a basting brush (or a spoon) to brush the chicken with the excess sauce in the baking dish. Ensure that the chicken is thoroughly covered.
Place back in the oven and bake for another 8 to 10 minutes.
Brush the chicken one final time with any remaining sauce, then garnish with freshly chopped green onions and sesame seeds.
