Quick TexMex Enchilada Burger

Ingredients for 4 burgers

4 Servings
* Optional Substitution Note

  • 1lb lean ground bison (OR your choice of protein)
  • 1/2 green bell pepper diced
  • 3 tablespoons enchilada sauce
  • 1 teaspoon garlic powder (optional)
  • 2 teaspoons onion powder (optional)
  • pinch of sea salt & pepper
  • Garnish
    • 4 slices cheddar (optional…but recommended. What are enchiladas without cheese?)
    • lettuce
    • tomato
    • onion

Steps

Step 1

Fire up the grill! Alternatively, you can set your oven to 420F or cook these in a nonstick skillet.

Step 2

Mix together all of the ingredients in a large bowl. Once thoroughly mixed, divide into 4 equal sized patties.

Step 3

Cook the patties on the grill until your desired readiness and BE SURE to cook on both sides. If you’re cooking these in a skillet, set it on medium-high heat and once hot, spray with a little oil then add the patties. Cook on each side for at least 4 minutes and be careful to monitor so the meat does not burn. When the meat is nearly finished cooking, add a slice of cheddar on top (if desired) and continue cooking for the remaining time.

Step 4

Enjoy on whole wheat burger buns along with lettuce, tomato (and a little cheese). For a low-carb option, use grilled portobello mushroom caps!
