Dijon Tarragon Pearl Couscous Salad
Ingredients
Salad
- 1 cup uncooked pearl couscous (also known as Israeli couscous)
- 1 1/2 cups cherry tomatoes
- 1 medium cucumber, diced (I used Persian or mini cucumbers)
- 1/2 cup chopped tarragon
- sea salt & pepper to taste
Vinaigrette
- juice from 1/2 large lemon
- 3 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon white vinegar
- 3 tablespoons olive oil
- cracked pepper to taste
Steps
Step 1
Cook couscous according to the instructions on the package. Should take no more than 10 minutes. Set aside to cool.
Step 2
Whisk together the ingredients for the vinaigrette in a bowl or cup and whisk until emulsified.
Step 3
Add all ingredients for the salad to a bowl and gently toss and fold everything together. Season to taste with sea salt & pepper.
Ingredients
- 1lb boneless and skinless chicken thighs, fat trimmed
- 2 teaspoons olive oil (as a binder)
- 1 tablespoon paprika
- 2 teaspoons turmeric
- 2 teaspoons dried parsley (optional)
- pinch of sea salt & pepper
Steps
Step 1
Add chicken to a bowl along with the rest of the ingredients.
Massage the seasoning onto the chicken, then cover and let it marinate at room temperature for about 20 minutes.
Step 2
Set a nonstick skillet on medium-high heat, and once hot spray with oil, then add the chicken. Cook for about 6 minutes per side, or until you see sear marks along the edges.
Step 3
Serve and enjoy with the Dijon Tarragon Couscous Salad!

This was a great recipe, I feel like it had a little too much dressing and tarrango for the salad. The chicken was awesome!

Great recipe as always! I like to lightly roast the couscous in a pan before cooking it. Gives a nice golden color and adds great taste to it.
