Air Fried Cheesy Popcorn Chicken Using Moon Cheese

AIR FRYER POPCORN CHICKEN
Ingredients for 5 servings
- 1 1/2 lb chicken breasts, cut into 1-inch chunks
- 2 eggs, lightly beaten
- First Coating
- 1/2 cup almond flour (or your choice of flour)
- 1 tablespoon The Fit Cook Cajun Blend (OR smoked paprika)
- Crispy Coating
- 4oz (~114g) Cheddar Moon Cheese (or dehydrated/dried cheese)
- 1/4 cup (gluten-free) panko or breadcrumbs
Steps
Step 1
Set air fryer to 400F (or set oven to 420F).
Step 2
Crush the Moon Cheese using a heavy object like a skillet and place the crumbs into a bowl along with the panko. The crushed cheese should be about as fine the panko.
Step 3
Place the eggs in a separate bowl and lightly whisk.
Step 4
Place the ingredients for the first coating and crispy coating in separate bowls and mix.
Step 5
Dip a chicken piece in the first coating with the almond flour, then in the eggs and then the crispy coating with the Moon Cheese. Place the coating chicken on the air fryer tray or basket. Repeat.
Step 6
Air fry (or bake) for 10-12 minutes, or until the outside is golden brown and the inside is completely cooked (and white).
Step 7
Enjoy with the honey mustard yogurt sauce or on top of a salad, like a Cobb salad.

Honey Mustard Yogurt Dipping Sauce
Ingredients for 5 servings
- 1 cup plain yogurt
- 4 tablespoons yellow mustard or Dijon (or to taste)
- 3 tablespoons honey
- juice from 1/2 lemon (or to taste)
- sea salt & pepper to taste (if desired)
