Spicy Chicken with Ruby Red Rice & Bulgur
Today we are making one healthy meal with spicy chicken with wild ruby red rice and bulgur, kale and pepitas. Easy to make, prep and devour!
Bulgur wheat is a great addition to your diet. It is low in fat, high and fiber and has been known to help inflammation. Bulgur may promote weight loss, and that’s a great benefit for your diet plan. You should implement it in your habits.
Red rice contains more concentrations of flavonoid antioxidants than brown rice which makes it a great food to eat more often.
These two foods go great with any source of protein, and I prefer to combine them with chicken or turkey. This is accompanied by a variety of spices, so you can add any spice you like.
Cook red rice and bulgur using water and no sodium chicken broth with a little garlic for added flavor.
Preparing chicken is also very simple. You can prepare it in an instant pot, grill or cook it. Fried chicken will also go well, although I prefer grilled chicken with this dish. The key is a combination of different spices.
Only 5 minutes are enough to prepare the chicken. Do not overcook it so that it is not dry. First, prepare the rice and bulgur to keep the chicken warm when serving.
Serve and garnish with kale or fresh lettuce and with 1/8 cup of pepitas. Start your bowl with a layer of kale, add cooked rice and bulgur and top with grilled spicy chicken and pepitas.
Although this dish is delicious when served warm, the flavors are not lost even when cooled. So you can prepare it today for tomorrow, and the next day at work you have a perfectly healthy and tasty lunch.
