Make Ahead Air-Fryer Breakfast Egg Rolls

BREAKFAST EGG & TURKEY SAUSAGE EGG ROLLS

Ingredients for 7 egg rolls

  • 5 whole eggs, lightly beaten
  • 1 tablespoon The Fit Cook Everyday seasoning
    • SUBSTITUTE: 2 teaspoons onion powder, 1 teaspoon garlic powder
  • 8oz lean breakfast turkey sausage
  • 1/2 cup diced colorful bell peppers (or you can use one color to reduce costs)
  • 1/2 cup fresh chopped cilantro
  • 77g reduced fat cheddar, slices or shredded (I used ultra thin slices of reduced fat cheddar that were roughly 11g per slice)
  • 7 egg roll wrappers
  • 1/2 cup water, for assembling the egg rolls
  • 2 tablespoons avocado oil for brushing (OPTIONAL – you can also use spray)

Steps

Step 1

Set air-fryer to 375F/191C.

Step 2

Sprinkle The Fit Cook Everyday seasoning into the bowl of eggs and beat.  Set a nonstick skillet on medium high heat and once hot, spray with a little oil, then pour in the eggs.  Pull the eggs from side to side of the skillet using a spatula.  Once the eggs are plump, begin to chop them up in the skillet.  Add the eggs to a large mixing bowl, then set the skillet back on the heat.

Step 3

Add the lean turkey sausage and chop it up as it cooks.  Cook for 4 to 6 minutes or until the meat is cooked through and there are no more visible raw pink pieces.  Add the turkey sausage to the mixing bowl along with the remaining ingredients (except the cheese if using slices).  Mix everything together in the bowl.

Step 4

Set an egg roll wrapper on a plate in the shape of a diamond, not a square.  Add a slice of cheese to the center, then place about 2 tablespoons of the mix on top.  Dip your finger in the water, dab the inside of the egg roll corner facing you, then fold it to close.  Dab your finger in the water again to wet the 2 side points, then fold them in as well.  Gently roll and firmly roll the egg roll over to close.  Dab your finger in the water and wet the remaining corner, and roll it over to seal and close the egg roll.  Repeat for remaining egg rolls.  NOTE: if you are making these to enjoy later, wrap them individually in parchment OR plastic wrap, then place them in a sealable bag to store in the freezer.  DO NOT cook them and then freeze.

Step 5

Place the egg rolls in the air fryer basket and lightly brush or spray the outside with oil.  Air fry for 12 to 15 minutes, or until the outside is golden brown and crispy!  NOTE: if going from a frozen state, follow the same steps of brushing/spraying the outside and increase the cooking time to 15 to 20 minutes

Step 6

Enjoy with fresh salsa, guacamole or even…low calorie maple syrup!

Ingredients for 7 egg rolls

    • SUBSTITUTE: 2 teaspoons onion powder, 1 teaspoon garlic powder
  • 1 tablespoon avocado oil or olive oil
  • 1 large Russet potato (or 2 medium red potatoes), grated
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • pinch of sea salt & pepper to taste
  • 1/2 cup diced colorful bell peppers (or you can use one color to reduce costs)
  • 1/2 cup fresh chopped cilantro (OPTIONAL)
  • 77g reduced fat cheddar, slices or shredded (I used ultra thin slices of reduced fat cheddar that were roughly 11g per slice)
  • 7 egg roll wrappers

Steps

Step 1

Grate the potato onto a cheesecloth or heavy duty paper towel. Squeeze out all excess moisture/water then set aside.

Step 3

Sprinkle The Fit Cook Everyday seasoning into the bowl of eggs and beat.  Set a nonstick skillet on medium high heat and once hot, spray with a little oil, then pour in the eggs.  Pull the eggs from side to side of the skillet using a spatula.  Once the eggs are plump, begin to chop them up in the skillet.  Add the eggs to a large mixing bowl, then set the skillet back on the heat.

Step 4

Add oil to the skillet, then toss in the grated potato. Sprinkle in the seasoning as it cooks.  Cook for 6 to 8 minutes or until the potato is tender but there are sear marks along the edges, like hash-browns.  Add the sautéed  potatoes to the mixing bowl along with the remaining ingredients (except the cheese if using slices).  Mix everything together in the bowl.

Step 5
