TexMex Chickpea Corn Fritters
Ingredients for 7 patties
- 1 can (15oz) garbanzo, rinsed and drained
- 3 garlic cloves
- 1/2 cup diced onion
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- juice from 1 lime
- —-
- 3/4 cup frozen corn, thawed and drained
- 2/3 cup colorful diced bell pepper
- 2 teaspoons lime zest
- ~5 tablespoons (~33g weighed) almond flour
- 2 tablespoons arrowroot powder
- pinch of sea salt and pepper
- 2 tablespoons avocado oil (or olive oil)
- Garnish
- fresh avocado
- fresh chopped cilantro
Steps
Step 1
Place the first 8 ingredients into a food processor and pulse blend until smooth. Empty the contents into a bowl.
Step 2
Then fold in corn, bell pepper, lime zest, arrowroot and sea salt & pepper.
Step 3
Scoop out 7 equal sized portions, roll into balls and make into patties. For best results, place the patties in the fridge or freezer for 20 minutes before cooking in a skillet.
Step 4
Set air-fryer (or oven) to 420F.
Step 5
Set a nonstick skillet on medium high heat and once hot, add the oil. Add the patties. Cook on each side for at least 3 minutes, then place the patties in an air-fryer basket or baking sheet lined with parchment paper.
Step 6
Bake for an additional 6 to 8 minutes then remove from the oven, and allow them to slightly cool before enjoying.
