Chicken Avocado Salad, 6 Ways (The Meal I’d Eat Every Day)

Chipotle lime chicken avocado salad with chipotles in adobo, charred corn, cotija and cilantro. Smoky, no mayo, no cooking, 45g protein per serving.

I was on a podcast a couple weeks ago and the host hit me with a rapid-fire round at the end. One of the questions was “what’s one food you could eat every day for the rest of your life.” I didn’t think about it. Chicken and avocado. Came out before he finished asking.

He laughed, because I think he was expecting pizza or tacos or something I’d have to pause on. But I’ve been eating chicken and avocado more days than not for years, and I’ve never once gotten tired of it.

Why chicken and avocado

Here’s why. Chicken is the protein. Avocado is the fat. That pairing is what keeps you full. You don’t need the carbs. You can put it on toast, in a tortilla, in a lettuce cup, or eat it out of the bowl standing at the counter, and it still works as a full meal. Most healthy lunches fail because they’re either dry protein with nothing to it or a pile of carbs that leaves you hungry an hour later. This fixes both.

The other reason is it’s a blank canvas. Chicken and avocado take on whatever you put with them. Same base, six different meals, and nobody at your table knows they’re eating the same thing all week.

The technique

Two avocados. One mashed until it’s creamy, which becomes the binder and replaces most of the mayo. One ripe but diced and folded in at the end so you still get chunks. That’s the difference between chicken salad that tastes like baby food and chicken salad that tastes like a meal. Rotisserie chicken, shredded, so there’s nothing to cook. Two cups of chicken, two avocados, every time. Only the add-ins change.

The six salads

Three are in the video. All six are here. Each one links to its own page with the full recipe, the macros, and which ingredient to pull back if you want it lighter.

1. Reina Pepiada Chicken Avocado Salad

The one I’d pick if I could only have one. Lime, red onion, cilantro, cumin, serrano. Toast on a weekday, arepa when I have the time.

450 cal | 44g protein | 15g carbs | 26g fat per serving

2. Mediterranean Chicken Avocado Salad

Olives, feta, tomato, lemon, balsamic glaze on top. No mayo, no yogurt. Looks like you tried harder than you did.

3. Buffalo Ranch Chicken Avocado Salad

4. Pesto Caprese Chicken Avocado Salad

6. Curry Chicken Avocado Salad

Before you look at the macros

Every recipe serves two, and every serving has a whole avocado in it. That’s on purpose. The fat is what makes this a meal without carbs, and it’s why you stay full for hours. So yes, the fat numbers are high. If 450 to 620 calories is more than you want, split each recipe into four servings instead of two. Same recipe, half an avocado each, works as a snack or a light lunch. Each recipe page also tells you exactly which ingredient is driving the number and how to pull it back.

Storage

Don’t freeze these. Avocado turns to water. In the fridge, press plastic wrap right on the surface and they hold for two days. Better move: freeze the shredded chicken in portions, prep the add-ins, and mix with fresh avocado the day you eat it. Two minutes.

FAQ

Can you make chicken avocado salad without mayo?

Yes. All six of these use mashed avocado as the binder. A few add a spoon of Greek yogurt. None need mayo.

How long does chicken avocado salad last?

Two days in the fridge with plastic wrap pressed on the surface. Don’t freeze the finished salad. Freeze the shredded chicken instead and mix fresh.

What chicken works best?

Rotisserie, shredded while it’s warm. Leftover grilled chicken is even better in the Mediterranean and chipotle versions.

Which one is lowest in calories?

Reina pepiada at 450. Curry is lowest in sodium. Pesto caprese is the richest at 600. Each recipe page shows the lighter version.

Is chicken avocado salad good for meal prep?

Yes, if you prep the parts and mix the day you eat it. One rotisserie chicken gives you two batches. Pick two flavors a week.
