Amazing Mini Breakfast Casseroles Recipe

You don’t have to eat egg whites and oatmeal every single morning. Unless you really want to, of course. Today I’m gonna show you a really easy way to make some mini breakfast casseroles that you can enjoy all week long.

For this delicious and easy breakfast, you’ll need some eggs, chicken sausages, whole grain bread, zucchini, bell pepper and onions, tomatoes, and my favorite, goat cheese. Also, you’ll need casserole baking dishes or ramekins.

Prepare main ingredients by shredding zucchini and slicing bell peppers and onions. Cut bread into cubes and slice tomatoes into rounds. Cook chicken sausages in a pan and cut them into pieces.

Now, beat the eggs and add peppers into a bowl, season and mix them. Slowly add other ingredients and mix thoroughly. When you made a compounded mix, spray a baking dish with coconut oil. Then, evenly add the mixture to every dish and place tomato slices on the top.

Bake in the oven for 25 minutes at 375F. Boom! Garnish your egg casseroles with fresh parsley and enjoy your breakfast! In this portion, you have 385 calories, and as much as 36 grams of protein which is great for breakfast.

Eating eggs for breakfast increases the feelings of fullness, reducing calorie intake during the day. Eggs also have the ability to maintain stable blood sugar and insulin levels, which most people have a problem with. That is why eggs are a very common choice for breakfast, but sometimes it can be boring.
