Butternut Squash Fritters
Ingredients for 8 fritters
- 4 cups shredded butternut squash
- 2 eggs, lightly beaten
- 1/2 cup oat flour (or all-purpose flour or almond flour)
- 1 1/2 tablespoons dried chives
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon turmeric
- pinch of sea salt & pepper
- 2 tablespoons avocado oil
- Yogurt Dipping Sauce
- 8oz 2% Greek yogurt
- 1 tablespoon avocado or olive oil
- 1 tablespoon fresh garlic, paste or minced
- 1 – 2 tablespoons dried chives
- pinch of sea salt & cracked pepper
Steps
Step 1
Peel a butternut squash, then shred it into a bowl using a grater. Then add the remaining ingredients (except the oil) to the bowl. Mix together to form a batter.
Step 2
Set a large skillet on medium heat. Once hot, add the oil. Form 8 equal-sized patties using the batter. Add to the skillet. Cook on each side for 3 to 5 minutes, or until golden brown and cooked through.
Step 3
Place the fritters on a paper towel OR a cooling rack after cooking in the skillet.
Step 4
Mix together the ingredients for the dipping sauce.
Step 5
Then dip the fritters into the yogurt.
