Butternut Squash Fritters Recipe

Ingredients

Butternut Squash Fritters
Ingredients for 8 fritters

  • 4 cups shredded butternut squash
  • 2 eggs, lightly beaten
  • 1/2 cup oat flour (or all-purpose flour or almond flour)
  • 1 1/2 tablespoons dried chives
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric
  •  pinch of sea salt & pepper
  • 2 tablespoons avocado oil
  • Yogurt Dipping Sauce
    • 8oz 2% Greek yogurt
    • 1 tablespoon avocado or olive oil
    • 1 tablespoon fresh garlic, paste or minced
    • 1 – 2 tablespoons dried chives
    • pinch of sea salt & cracked pepper
Steps
  1. Peel a butternut squash, then shred it into a bowl using a grater.  Then add the remaining ingredients (except the oil) to the bowl. Mix together to form a batter.
  2. Set a large skillet on medium heat.  Once hot, add the oil.  Form 8 equal-sized patties using the batter.  Add to the skillet.  Cook on each side for 3 to 5 minutes, or until golden brown and cooked through.
  3. Place the fritters on a paper towel OR a cooling rack after cooking in the skillet.
  4. Mix together the ingredients for the dipping sauce.
