Ingredients

Air Fried Burrito Egg Rolls
Ingredients for 10 servings

  • 1lb 95% lean ground beef (or chicken or turkey or veggie ground)
  • 1/2 cup diced red onion
  • 1 red bell pepper, diced
  • 1 tablespoon chili powder
  • 2 teaspoons oregano
  • pinch of sea salt & pepper
  • 1 can (15oz) low sodium black beans (I used black lentils), drained
  • 1/2 cup finely chopped cilantro
  • 3/4 cup Mexican blend shredded cheese
  • 12 egg roll wrappers
  • 2 egg whites – I used Bob Evan’s Egg Whites

Air Fried Burrito Egg Rolls
Ingredientes para 12 porciones

  • 1 libra de carne molida 95% magra (o pollo o pavo o vegetales molidos)
  • 1/2 taza de cebolla roja picada
  • 1 pimiento rojo, cortado en cubitos
  • 1 cucharada de chile en polvo
  • 2 cucharaditas de orégano
  • 1 lata (15 oz) de frijoles negros bajos en sodio (usé lentejas negras), escurridas
  • 3/4 taza de queso rallado de mezcla mexicana
  • 10 envolturas en masa para hacer lo rollos de huevo
  • 2 claras de huevo – utilicé las claras de huevo de Bob Evan
Steps
  1. Set the air fryer (or oven) to 420F.
  2. Set a nonstick skillet on medium heat.  Once hot, lightly spray with oil, then add beef, onion and bell pepper.  Chop up the meat as it cooks in the skillet.  Add the seasoning while it cooks and continue cooking for 6 to 8 minutes, or until there are no longer any visible pink pieces.  Add the meat mix to a bowl.
  3. Then add the remaining ingredients for the filling to the bowl and mix it well.
  4. Add about 2 tablespoons of the mixture to the center of the egg roll diagonally.  Dip a finger in the egg white then drag your finger along the inner edges to make it sticky.  Fold the corner over the mixture, then fold in the sides, then roll it closed.  The egg white should help seal it.  Place the egg rolls in the air fryer basket and repeat until all the mixture has been used.
  5. Brush the outside of the egg rolls with the remaining egg white mixture, then lightly spray them with avocado oil (or coconut or olive oil) before placing in the air fryer.  Cook for 12 to 15 minutes, flipping halfway through, or until the outside is crispy and golden brown.

PASOS EN ESPAÑOL

  1. Ajuste la freidora (u horno) a 420F.
  2. Ponga una sartén antiadherente a fuego medio. Una vez caliente, rocíe ligeramente con aceite, luego agregue carne de res, cebolla y pimentón. Pica la carne mientras se cocina en la sartén. Agregue el condimento mientras se cocina y continúe cocinando durante 6 a 8 minutos, o hasta que ya no haya trozos rosados visibles. Agregue la mezcla de carne a un tazón.
  3. Luego agregue los ingredientes restantes para el relleno al tazón y mezcle bien.
  4. Agregue aproximadamente 2 cucharadas de la mezcla al centro del rollo de huevo en diagonal. Sumerja un dedo en la clara de huevo y luego arrastre el dedo por los bordes internos para que quede pegajoso. Dobla la esquina sobre la mezcla, luego dobla los lados, luego ciérrala. La clara de huevo debería ayudar a sellarla. Coloque los rollos de huevo en la canasta de la freidora y repita hasta que se haya usado toda la mezcla.
  5.
