Portion Control Chicken Kabob Meal Prep

If you’re needing to cook chicken in bulk for the week and want to better measure your portions, try using kabobs.  Each kabob is a measured portion of your serving. Here are 3 quick ways to season your chicken breasts to keep your diet interesting!

Curry-spiced kabob

Ingredients for at least 18oz chicken pieces:

  • 1 tbsp curry powder
  • 1 tsp coriander
  • 1.5 tsp cumin
  • 1 tsp onion powder
  • juice from 1 lemon

Smoky Sriracha kabob

Ingredients for at least 18oz chicken pieces:

  • 3 tbsp Sriracha
  • 1 tbsp sesame oil
  • 1 tbsp paprika
  • 1 tsp cumin
  • 2 tbsp sesame seeds (after cooking)

Pineapple mustard kabob

Ingredients for at least 18oz chicken pieces:

  • 3 tbsp honey mustard (OR use regular mustard then add 1 tbsp organic honey)
  • 1 tbsp red pepper
  • 1 tbsp garlic paste
  • 1 tbsp white balsamic vinegar
  • 1 cup pineapple chunks
  • 1 red bell pepper

Steps:

  1. Cut your chicken breast into pieces.
  2. Season the pieces of chicken breast.
  3. Weigh your serving size of chicken breast (ex: 4oz – 8oz chicken breast).
  4.  Assemble the kabobs.
  5. Bake in the oven for about 16 – 20 minutes at 405F, or cook on a grill.
