Set a nonstick skillet on medium heat. Add the frozen cherries and a few tablespoons of water.
Continuously stir the cherries for 3 -5 minutes to ensure they are not burning. Begin to gently mash the soft cherries, and leave the rest alone until they become soft and explode.
Cover the cherries for another 3 – 5 minutes to trap them in all the heat and help them soften faster.
Use the back of the spatula to gently mash the cherries to cause them to explode their natural juice. Squeeze in fresh orange juice and continue mashing the cherries.
Note: If it is bubbling, reduce the heat of the skillet to a light simmer.
Continue mashing until all the cherries have exploded and their natural juices fill the pan. Remove from the heat and allow to cool to thicken.
Add the jam to an airtight container and store it in the fridge for up to two weeks.
