Spicy Chicken Salad with Grilled Eggplant Sliders


  • 5oz Chicken breast
  • Eggplant
  • garlic
  • onion powder
  • nonfat Greek yogurt
  • 1 0z goat cheese
  • diced bell pepper
  • black pepper
  • cayenne pepper
  • red onion
  • paprika


Step 1

In a food processor, blend cooked chicken breast. Add garlic and onion powder.

Step 2

In a bowl, add blended chicken, 1 large tbsp of nonfat Greek yogurt, 1oz goat cheese, diced bell pepper, black pepper, cayenne pepper and red onion. Season with paprika and Mrs. Dash Southwest Chipotle seasoning. Mix.

Step 3

Lightly spray a skillet with olive oil and set the skillet on medium high heat. Add eggplant slices or wedges and sear the sides.
