Southwest Quinoa Salad Bowl Recipe

Ingredients

  • 1 1/2 cups cooked quinoa
  • 1/2 can (8oz) low sodium black beans
    • drained
  • 3/4 cup frozen corn
  • 1 large ripe avocado, diced
  • 4 tablespoons green salsa
    • Note: use your favorite store-bought or homemade salsa
Optional Garnish
  • cilantro, chopped
  • fresno pepper, sliced

Steps

Step 1

Add all the ingredients to a bowl and toss together.

Season to taste with sea salt & pepper and garnish.
