Fire Up the Grill
Preheat your grill to 350°F. Alternatively, if you don’t have a grill, a nonstick skillet on medium-high heat works just as well.
Prepare the Shishito Peppers
Heat safflower oil in a nonstick skillet over medium-high heat. Once the oil is hot, add the shishito peppers and minced garlic. Toss the peppers in the oil and garlic, ensuring all sides are coated. Add a pinch of sea salt and pepper, and sear the peppers for 2-3 minutes until they blister.
Season and Shape the Bison Patty
Combine the ground bison with smoked paprika, cumin, sea salt, and pepper. Mix well and form into a patty. Add a teaspoon of Dijon mustard to the mixture for extra depth of flavor.
Cook the Bison Burger
Place the patty on the hot grill or skillet and cook to your desired level of doneness. For safety, it’s recommended to cook bison meat thoroughly, as wild game can sometimes carry bacteria.
Assemble the Burger
Toast the sprouted grain bun for a minute or two on the grill or skillet. Build your burger with bison and shishito peppers by layering the patty, grilled shishito peppers, heirloom tomato slices, red onion slices, and lettuce. Top with the other half of the bun, and your gourmet burger is ready to serve!
