- Line a bread pan with parchment paper or grease it lightly with coconut oil.

- In a large mixing bowl, combine the wholemeal flour, baking soda, baking powder, salt, and allspice. Whisk until evenly distributed.

- In another bowl, whisk together the egg, melted coconut oil, and pumpkin puree until smooth. If using sugar, mix it into the wet ingredients as well.

- Gradually add the dry ingredients to the wet mixture, stirring gently until everything is just combined. The batter will be thick and dense, which is normal.

- Pour the batter into the prepared bread pan and smooth the top. Sprinkle pumpkin seeds on top if desired for added texture and flavor.
- Bake in the preheated oven for 60-75 minutes. Check for doneness by inserting a knife or skewer into the center; it should come out clean.
