Ingredients that You’ll Need for Key Lime Mousse Pie

Blender
  • 1 cup key lime or lime juice (about 10 key limes)
  • 2 tablespoons lime zest
    • remember for "zest" try ONLY to include the colored part. The white part makes it bitter.
  • 1/2 cup chia seeds
  • 3 scoops vanilla lean whey protein
  • 1 tablespoon vanilla extract *
  • 5oz 2% Greek yogurt
  • 3/4 cup unsweetened vanilla almond milk
  • 1 tbsp agave or 1 teaspoon Stevia *
    • If your protein is not flavored or low in sugar, feel free to add a sweetener of choice

Crust
  • 3 low calorie graham crackers

Garnish
  • lime slices

How to Make the Best Key Lime Pie Mousse Recipe

Step 1

Blend the Ingredients
Start by adding all the “Blender” ingredients to a high-speed blender: 1 cup of key lime or lime juice, 2 tablespoons of lime zest, 1/2 cup chia seeds, 3 scoops of vanilla lean whey protein, 1 tablespoon of vanilla extract, 5 oz of 2% Greek yogurt, 3/4 cup of unsweetened vanilla almond milk, and 1 tablespoon of agave or 1 teaspoon of Stevia (depending on your preferred sweetness). Blend until smooth. Make sure to only zest the colored part of the lime peel, as the white part can add bitterness.

 

Step 2

Check Consistency
After blending, ensure the mousse is the right consistency. The mixture will thicken as it cools, but it should be smooth, not too runny or overly thick. If your mousse is too thick, gradually add tablespoons of almond milk while blending to achieve a smoother consistency. This is especially important if you’re using vegan protein powder, which can result in a thicker mixture.

Step 3

Prepare the Crust
Crush three low-calorie graham crackers to form the base of the mousse cups. Add 1 crushed graham cracker to the bottom of each small jar (a 435ml size jar works well). The graham cracker base provides a delightful crunch that contrasts with the creamy mousse on top.

Step 4

Pour and Garnish
Pour the blended chia mousse into the jar over the graham cracker base. Then, garnish the top with thin slices of lime for a vibrant, decorative touch. The bright lime slices also enhance the zesty flavor of the mousse.

Step 5

Chill the Mousse
Seal the jars and store them in the fridge for at least three hours or overnight for the best texture. The chia seeds will absorb the liquid and thicken the mousse further, resulting in a creamy, pudding-like texture that resembles the filling of a classic key lime mousse pie.
