How to Make a Delicious Poke Tower

Step 1

Step 1: Prepare the Asparagus

  • Place asparagus pieces in a microwavable safe bowl with a lid.
  • Add 1/4 cup water, cover, and microwave for no more than 1 minute to soften. The pieces should be a vibrant green color and crisp-tender.
  • Remove the asparagus from the bowl and place it in the fridge to chill with the rest of the ingredients.

Step 2: Mix Mango and Avocado

  • In a bowl, mix together the diced mango and ripe avocado.
  • Ensure your avocado is ripe; the creaminess helps keep the slippery mango from falling out of the tower once the can or springform pans are removed.

Step 3: Prepare the Form

  • Use a mini springform pan or an empty large, tall can (like a garbanzo bean can).
  • If using a can, remove the top and bottom, thoroughly wash it, and lightly grease the inside with avocado or sesame oil (or any oil except coconut oil).
  • You may need to stack two springform pans or cans to create a tall tower.

Step 4: Marinate the Tuna

  • In a bowl, mix all the ingredients for the tuna together: diced ahi tuna, chili flakes in oil, sesame oil, tamari, and green onion.
  • Set aside in the fridge to marinate for at least 10 minutes.

  • Add each ingredient to the pan or can, starting with the rice. Gently pat down each ingredient so that it becomes compact and solid.
  • Pro tip: When slicing the tuna and salmon, reserve about 1/3 cup of each cubed fish, then mince them separately using a knife. The mince will be sticky and perfect for keeping the fish together in the pans and cans.

Step 6: Add Final Layers and Chill

  • Top with the asparagus slices.
  • Place the tower in the fridge for 15-20 minutes to help it maintain its shape. While the tower chills, prepare the spicy mayo sauce (recipe below).

Step 7: Remove the Form

  • Carefully and gently remove the springform pans or the can from the tower, placing the tower on a large plate.
  • Drizzle with spicy mayo sauce and gently mash and mix using a fork.
  • Serve with a seaweed salad or garden salad, or as an appetizer for a meal at a get-together or party.
