Ingredients for 8 servings:
Chop chicken breast into small pieces and pat the pieces dry with a paper towel.
Spray a (nonstick) skillet with olive oil and set it on medium heat. When the skillet is hot, add the chicken pieces. Sear for 3 to 5 minutes until the outside of the chicken is brown (note: it is ok if the chicken is not fully cooked). Remove the pieces from the skillet and set aside.
Using the same skillet, add olive oil, garlic and red onion. Sauté on low-medium heat for 3 minutes, until the red onion begins to caramelize. Add the seasonings and stir for another minute, then add the uncooked rice. Mix the rice with oil and seasonings, ensuring every grain of rice is covered, about 2 minutes.
Add stock, tomato sauce and the pieces of chicken. Mix together and bring to a simmer, then cover and cook for at least 25 minutes, until the rice is completely cooked. If needed, add tablespoons of stock or water if needed.
Once the rice is cooked, add the frozen Bold Fiesta mix and vegetables. Fold everything together, and if more liquid is needed, simply add tablespoons of stock or water (but not too much). The mixture should be somewhat thick, like enchilada sauce.
Add freshly chopped cilantro and top with goat cheese crumble and fresh avocado mash (or guacamole). Enjoy!
