Grilled Chicken, Wilted Spinach & Sundried Tomato Panini

Ingredients

  • 5 oz Chicken breast (without watermelon slices)
  • Spinach
  • Sandwhich bread
  • 10 oz goat cheese
  • 30g Sundried tomatoes

Steps

Step 1

Season and grill chicken breast.

Step 2

Toss spinach into a skillet and cook for about 1 minute until it is wilted but not soggy.

Step 3

Then assemble a sandwich using Genesis (or Ezekiel or whole grain) bread, sundried tomatoes and 1oz goat cheese and 30g sundried tomatoes (with oil).

Step 4

Lightly spray a George Foreman grill with olive oil and place the sandwich on that until the bread is toasted.
