Set oven to broil. Add cherry tomatoes to a baking tray and spray with oil and sprinkle with sea salt & pepper. Broil for 5 – 7 minutes or until the tomatoes begin to naturally explode.
Set a pot on medium-high heat and bring to a simmer. Use a spoon to create a swirl inside of the pot, then add the egg you would like to be poached.
Toast sourdough in a skillet with a little olive oil or butter while the tomatoes broil.
Mash avocado with a fork and season to taste with lime juice, cumin, sea salt & pepper.
Load up the toast! Bread >> avocado >> roasted cherry tomatoes >> red onion >> poached egg, sea salt & pepper, and greens.
