Homemade Egg White Fortune Cookies with Dad Jokes

Ingredients for 12 cookies

  • Wet
    • Bob Evans Egg Whites
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract (optional)
    • 1 tablespoon room temperature water
  • Dry
    • 1/2 cup oat flour (or all purpose flour)
    • 1/2 cup coconut sugar (or cane sugar if you must)
    • pinch of fine sea salt

Steps

Step 1

Set oven to 350F.

Step 2

Write out your dad jokes on small pieces of paper.

Step 3

In a bowl, whisk together the Bob Evans Egg Whites with the rest of the wet ingredients until it is very foamy (it should still be kinda runny).

Step 4

For best results, sift the flour and sugar over the bowl of wet ingredients and mix together until the batter forms, kinda like pancake batter.  Note that you DO NOT need a sifter.  You can just mix the dry ingredients together and then add them to the wet ingredients.  Pro-Tip: add natural food coloring to the cookies for extra personality!

Step 5

Take a large baking tray and line it with parchment paper or silpat (which is what I used). From experimenting, this recipe works best if you flip the baking tray over and bake on that side so that the batter spreads and thins out easier.

Step 6

Use a tablespoon to measure out some of the batter and add to the baking tray and make a 3 – 4 inch circle. ONLY MAKE 2 COOKIES AT A TIME, trust me. 😂

Step 7

Bake for 6 – 8 minutes, or until the edges of the cookie begin to brown in the oven. Immediately grab the cookie, flip it over, place the dad joke inside, fold it like a taco, then bend it in half and place it in a muffin tin. Repeat. For best results (and help ensure crunchiness), after I made the cookies, I placed the muffin pan in the oven for an additional 4 – 6 minutes, then allowed them to cool and harden for at least 15 minutes.

Step 8

Crack them open and crack yourself up!
