Ingredients

Salad
  • 1 can (15oz) no sodium black beans
    • drained
  • 1 can (15oz) no sodium black-eye peas
    • drained
  • 1 can (15oz) no sodium red kidney beans
    • drained
  • 1 red bell pepper
    • diced
  • 1 yellow bell pepper
    • diced
  • 1 orange bell pepper
    • diced
  • 3 roma tomatoes
    • seeds removed and diced
  • 2 medium ripe avocados
  • diced
  • 1/2 cup cilantro
    • finely diced
dressing
  • 1/2 (18g) chili or taco seasoning packet
    • any kind will do or just use chili powder
  • 4 tablespoons water
  • 1/3 cup avocado oil
    • olive oil
  • 1/2 lime
    • juice only
  • 1 1/2 teaspoon coconut sugar
    • raw cane or brown sugar
  • 1 tablespoon white vinegar

Step 1

Make the Awesome Dressing

We are starting by making the special sauce that gives this caviar its unique flavor. In a large enough bowl, combine the taco or chili spice (or chili powder if you like), water, avocado or olive oil, lime juice, coconut sugar (can be substituted with raw cane or brown sugar), and a dash of white vinegar. To give it that additional kick, do not forget to add a touch of salt and pepper after whisking it until it is smooth. After everything is well combined, put it aside.

Gather All of Your Ingredients

It is now time to put the components together. Consider it as assembling a dream culinary team. Start with a large bowl. Combine together the drained black beans, black-eye peas, red kidney beans, sliced orange, yellow, and red bell peppers, ripe avocados, finely chopped cilantro, and Roma tomatoes from which you need to remove seeds.
