Chicken Fried Rice with Orange

Ingredients for 5 servings

  • Sauce
    • juice from 1 orange
    • 1/3 cup orange marmalade
    • 1/4 cup low sodium soy sauce
    • 1 tablespoon arrowroot powder
  • 1 1/2 lb raw chicken breasts,  cut into 1-inch pieces
  • spray avocado (or olive) oil
  • 1 tablespoon avocado oil (or olive oil)
  • 1 tablespoon garlic, minced
  • 1/3 cup green onion, chopped
  • 1 1/2 cups sugar snap peas
  • 1 red bell pepper, chopped
  • 3 cups cooked brown rice
  • 1/2 cup matchstick carrots
  • 1 cup frozen shelled edamame
  • Garnish
    • sesame seeds
    • green onion
    • orange zest
