Ingredients for 1 serving:
Set oven to 405F.
Wash red potatoes, poke holes in it using a fork, and bake for about 1 hour in the oven, or until soft. Allow the potatoes to cool.
Season tilapia and bake in the oven for 8 minutes.
Cut the top off a red potato and scoop out part of the inside of a red potato.
Mix with baked tilapia, greek yogurt, goat cheese, cayenne, paprika and chives. Season with sea salt & pepper to taste.
Re-stuff the potato with the mixture and bake for 10 minutes at 405F.
If desired, add 1 tbsp Greek yogurt instead of sour cream to the top of the potato. Add a side salad and enjoy!
