Mix ingredients for the marinade together in a bowl. Place raw chicken breasts in a sealable plastic bag, then pour in the marinade. Remove the air from the bag, then seal it. Marinate in the fridge for at least 1 hour, or overnight.
Set a nonstick skillet on medium heat and lightly spray with olive oil. Add the chicken breasts to the skillet and sear and cook on each side for 6 to 8 minutes. The outside should be seared and no longer pink, and the inside should be white.
Remove the chicken from the skillet and place on a plate (or in meal prep containers).
Garnish with freshly chopped mint to boost the flavors.
