Set oven to 400F.
Place the halibut on a baking tray lined with parchment paper.
Spray the fillet with a little oil then add the seasonings. Gently massage the seasonings into the flesh. If desired, place thin lemon slices on top.
Bake in the oven for 6 to 8 minutes, until the fish is completely white, then place the oven on broil for no more than 2 minutes to brown/sear the top. Remember, it doesn’t take fish as long to cook as chicken or beef and the risk of over cooking and drying it out is a real possibility, so it is important to monitor your fish while it cooks.
Season to taste with sea salt, pepper and fresh lemon juice.
