Pat chicken dry with paper towels and trim any large visible pieces of fat.
Use a hand blender or mortar & pestle to create the wet rub.
Add it to the chicken along with the remaining ingredients.
Marinate for 20 minutes, or place in the fridge to marinate for 1 to 2 hours.
Set air fryer to 400F (or oven to 420F).
Place the chicken in the air fryer basket (or on a baking tray lined with parchment if using the oven) and air-fry for 20 – 22 minutes, turning or flipping the chicken halfway.
