Meatloaf & Mash

Ingredients for 8 Meatloaf servings

  • Meatloaf
    • 1 tablespoon olive oil
    • 4 garlic cloves, minced
    • 1 medium red onion, diced
    • 1 green bell pepper, diced
    • 2 tablespoons Worcestershire sauce (optional but recommended)
    • 2 lb 93% lean ground turkey
    • 2 eggs
    • 1 1/2 tablespoons The Fit Cook Everyday blend
    • 1 tablespoon smoked paprika
    • pinch of sea salt & pepper
    • 2 tablespoons arrowroot
    • 2/3 cup quick oats
    • 1/2 cup grated parmesan
  • Glaze
    • 3/4 cup reduced calorie veggie ketchup
    • 2 tablespoon dijon mustard
    • 1 tablespoon apple cider vinegar
    • 1/4 cup coconut sugar (or brown sugar)
    • 1 tablespoon liquid smoke (optional but recommended)
  • Mash
    • 36oz (1020g) cauliflower florets
    • 2 oz goat cheese
    • 2 tablespoons butter
    • 1/4 cup unsweetened almond milk
    • 1 tablespoon The Fit Cook Everyday blend
    • 1 tablespoon fresh thyme
    • sea salt & pepper to taste
