Meal Idea: Ditch the Bagel for Portobello Mushroom

If you’re looking for a lower carbohydrate option for breakfast instead of a bagel, remember you can always use portobello mushroom. Even though it is lower in carbs, it is quite hearty and can leave you feeling satisfied.

One of my favorite ways to enjoy it is simply grilling or roasting it in the oven and then stuffing it! For breakfast, I stuffed it with scrambled eggs, Greek yogurt cream sauce and smoked salmon.  This meal is hi-energy, loaded with omega-3 fatty acids, so you’ll have energy to conquer daily tasks.

Ditch the Bagel for Portobello Mushroom

Ingredients

For this breakfast idea:

  • portobello mushroom cap
  • eggs & egg whites
  • smoked salmon
  • Greek yogurt sauce (yogurt mixed with goat cheese, blended cucumber, dill, sea salt & pepper)
  • mixed greens
Steps

Notes: Remember to scrape out the inside of the mushroom cap prior to grilling. Use a spoon and simply (and carefully) carve out the black portion of the mushroom cap.  Spray it with a little olive oil and season with sea salt, then toss it on the grill (or place in the oven).  Grill the portobello for no more than 15 minutes at 350F.
