A Bowl of Benefits

Now, let’s talk about why soup recipes should absolutely be a staple in your diet. Trust me – there are numerous compelling reasons:

  • Eating Seasonally: Soups are the epitome of seasonal eating. They allow you to harness the flavors and ingredients that Mother Nature provides during this time of year. Think about the abundance of root vegetables, hearty greens, and aromatic spices just waiting to elevate your soups to the next level. Try a yummy potato soup or other vegetable soups to really show off the season.

  • Nutrient Powerhouses: Soup is like a nutritional treasure chest. It’s packed with essential vitamins and minerals that your body craves, especially as the days grow shorter. It’s like a warm, comforting hug for your immune system, which is particularly important during the cold and flu season. In addition to the seasonal veg mentioned above, look for bean soups that provide a protein-packed punch and leafy greens soups that offer an abundance of vitamins. The nutrient powerhouses hidden within various soups can help fortify your body against the seasonal chill and keep you feeling your best.

  • Low-Calorie, Low-Fat, High-Fiber: When you’re watching your waistline or aiming to maintain a healthy weight, soups are your best friend. They’re generally low in calories, low in fat, and high in fiber, making them a guilt-free indulgence.

  • Easy on the Wallet: Let’s face it, times can be tough, and we all appreciate a little extra wiggle room in our budgets. Soups are not only easy to prepare but also incredibly cost-effective. You can create hearty and satisfying meals without breaking the bank.

  • A Hug for Your Soul and Home: It’s not just about feeding your body; it’s about feeding your soul and creating a warm, inviting atmosphere in your home. The aroma of simmering soup fills the air with comfort and coziness, making your space feel like a safe haven from the chilly weather outside.

So, get ready to cozy up to the delicious world of soup with recipes that promise both health and happiness in every savory spoonful.

You know I have to kick this off with a Mediterranean recipe. This was also one of the first recipes we recorded in the studio after the COVID shutdown happened. This one’s inspired by an old favorite and serves as an excellent reminder that soup can be enjoyed year-round! If you love this recipe (and I’m certain that you will), be sure to put it in your back pocket for later – this is a FANTASTIC way to use up any leftover turkey you might have after Thanksgiving!

This is easily one of the most flavorful soups I’ve ever put together. It’s also probably one of the most fragrant! Make sure you put enough broth into the pot to cover the chicken – this way it’ll fall apart beautifully after it’s cooked. Also, by adding in the canned green chiles at the END, we really increase their presence in the recipe. Altogether this instant pot chicken soup should take about forty minutes to make, but you’ll be able to spend most of that time kicking your feet up and letting the instant pot do its thing. I personally like to add Greek yogurt instead of sour cream to keep this recipe more health-conscious. Don’t be afraid to give it a try!

Here’s my take on the classic chicken noodle soup – except we’re swapping the noodles out and replacing them with LOADS of greens. This is a low-carb recipe but incredibly hearty and satisfying, and the Italian-inspired flavor profile will make it hard for you to put the spoon down. With this one, you’ll get a delicious dose of essential vitamins and minerals. If you like to use slow cooker recipes to pack your fridge and freezer with meal prep, this is the perfect recipe for you. Make a large batch and store it in individual containers and you’ll have dinner ready the instant you come inside from the cold!

Speaking of cold… I learned this recipe during a trip to Iceland where I had a VERY chilly fishing trip. This delicious, hearty, and simple soup warmed me up in a heartbeat. I love that this recipe uses lamb, which isn’t as common in the soups that you find here in the US. This is a slow cooker recipe, so it’s perfect for throwing everything together early on a Sunday – just make sure you sear the lamb properly before you put everything in the crock pot. To get the most out of this recipe, you’ll want to cook it, set it aside, and then enjoy it the next day when all the flavors have pulled together.

BONUS: This recipe involves LOTS of chopping, which I find incredibly therapeutic and relaxing, so get ready for some zen!

I had to include some seafood on this list, so I dug back and found this amazing pho-inspired recipe that I promise you’re going to love. This is a classic #FMC recipe that’s creative, follows my three-color rule, and will probably teach you something new along the way – don’t try to tell me you’ve made shrimp meatballs before! Searing the baby bok choy before you put it all together adds just a bit of complexity to the dish, but what I love about this one is the medley of flavors. The jalapeño, cilantro, and lime are all optional but I promise you’ll be missing out if you skip on any of them!

It’s no secret that most of us rarely (if ever!) enjoy a can of cream of mushroom soup as a standalone dish these days. Let’s face it – it’s not the healthiest option. Case and point: watch it plop out of the can as a solid glob. It’s often used as an ingredient rather than a comforting bowl of soup. But I want you to toss that in the trash and instead think about my vegan-friendly Cream of Mushroom Soup that’s truly worth savoring as a hearty, nutritious bowl of soup. But it can also be used as an ingredient in other vegan recipes! If you’ve been on the lookout for a delicious and health-conscious alternative, this recipe is your answer. It’s time to reimagine your relationship with this classic flavor in a way that not only respects your dietary choices but also indulges your taste buds.

I know we all have a soft spot for those comforting bowls from Panera, but let’s be honest, they can pack quite the calorie punch. But fear not, my friends, because we’re about to recreate that same broccoli-cheese goodness with a fraction of the guilt. This recipe isn’t just about eating well – it’s about enjoying the process and treating yourself to something amazing. We’ll bring together tender chicken, vibrant broccoli, and a rich, cheesy broth that will make your taste buds do a happy dance. So, whether you’re a Panera regular or just a lover of Broccoli Cheese Soup, get ready to whip up a bowl of comfort that’ll have you coming back for seconds without a second thought.

Get ready to transport your taste buds straight to the sun-soaked shores of the Mediterranean – this soup is nothing short of a flavor explosion! It comes together quickly and easily and is nothing short of a soup you’ll crave all season. If you’re looking for a low-carb option, this recipe also does great with cauliflower rice.

This recipe is so easy that it’s about to become your new favorite weeknight go-to. Don’t let the lengthy list of ingredients scare you away. This recipe is all about capturing the essence of Taco Tuesday while keeping things simple, convenient, and oh-so-delicious. After popping a few cans of tomatoes and black beans and throwing in a dash of this and that to season it up, you’ll have this soup simmering on the stove in minutes.

Quick Butternut Squash Soup Recipe

This soup is proof that you can enjoy both health-conscious choices and incredible flavor in one bowl. Get ready for a vegan, vegetarian, and gluten-free soup – but you’d never guess that because it’s SO delicious and creamy. Skip the dairy products and instead go for butternut squash to add a silky texture that’ll have you coming back for seconds. Finish it off with a drizzle of coconut milk for a fancy and delicious topping.

If you have an uncarved pumpkin on your porch, you can turn that decoration into a yummy pumpkin soup by swapping the squash in this recipe for pumpkin. Enjoy this soup served warm or cold. And it’s also a great starter for your next Thanksgiving dinner.

Kevin Curry’s Top Kitchen Tips for Crafting Exceptional Soups

When it comes to making soups that are both healthy and outrageously delicious, I’ve got some insider tips to share. So, roll up those sleeves and let’s level up your soup game. Whether you’re a seasoned chef or just starting your culinary journey, these tips are your secret ingredients for crafting soups that are downright irresistible.

Freshness Is Key:

Start strong with the freshest ingredients you can lay your hands on. The secret to mind-blowing soups begins with top-notch veggies, herbs, and proteins. Hunt down local and seasonal produce for the tastiest results.

Sizzle Up the Aromatics:

Before you dive into the broth, kick things off by sautéing your flavor powerhouses – onions, garlic, and spices – in a splash of olive oil or butter. This little dance releases their magic and sets the stage for flavor fireworks.

Layer It Up:

Building flavors is like creating a symphony. Add your ingredients one by one, allowing each to strut its stuff. Start with aromatics, follow with veggies, then pour in the liquid and toss in your protein. Season along the way to let every layer shine.

Homemade Broth Bliss:

If you’ve got the time, whip up your own broth. It’s surprisingly easy and takes your soup to new heights. Save veggie scraps, bones, or trimmings to whip up a homemade elixir of flavor.

Seek Harmony:

Finding the perfect flavor harmony is your soup’s golden ticket. Balance acidity with sweetness and saltiness with creamy richness. A hint of acidity, like a squeeze of lemon or a splash of vinegar, can wake up your soup, while a pinch of sugar can coax out a hidden sweetness.

Low and Slow:

Don’t be in a hurry! Let your soup simmer slowly, allowing the flavors to mingle and form a taste party in your pot. Low and slow cooking also transforms tough proteins into tender bites and turns veggies into silk.

Herbaceous Delights:

Fresh herbs are your flavor secret weapons. Toss them in near the finish line to keep their zing intact. Experiment with different herbs to find your soup’s soulmate.

Texture Play:

Think about texture. Some soups demand a silky puree, while others thrive on hearty chunks of veggies or proteins. Tune your soup’s texture to match your cravings.

Taste and Tweak:

Keep tasting your creation as it simmers, and don’t hesitate to adjust seasonings as you go. Remember, it’s easier to add more salt or spices than to tame an overzealous pot.

The Encore Effect:

Soups often become stars after a night in the fridge. Store leftovers in airtight containers, and when you’re ready to reheat, do it gently over low heat to maintain peak deliciousness.

With these tips in your back pocket, you’re well-equipped to whip up soups that not only nourish your body but also thrill your taste buds. Whether you’re conjuring a comforting classic or experimenting with bold new flavors, these guidelines will make you the soup maestro of your kitchen. Let the cooking adventures begin!
