    What do you get when you combine egg, Rotisserie chicken and creamy avocado on top of a toasted sourdough?  The most delicious, no fuss chicken salad you can make on-the-go.

    It’s a great base recipe and EVEN better with some calorie-conscious customizations for your tastebuds.

    Loaded Egg, Chicken & Avocado Toast

    Ingredients

    Ingredients for 5 servings:

    • 1 lb Rotisserie white chicken meat, chopped
    • 1 large ripe avocado
    • 2 tablespoons yogurt
    • 1 celery stalk, chopped
    • 2 tablespoons fresh dill, chopped
    • 1/4 cup fresh parsley, chopped (OR cilantro)
    • 2 eggs, boiled and chopped
    • fresh lime juice to taste
    • sea salt & pepper to taste
    Steps

    Mix chicken, avocado and yogurt together in a large bowl.  Then gradually fold in the remaining ingredients.  Enjoy on toasted bread OR on lettuce wraps.
