Loaded Sweet Potato or Yam for Post Workout.
STEPS:
- Slice yam or sweet potato in half vertically NOT down the middle.
- Wrap each piece in foil.
- Bake in the oven at 405F for about 30-45minutes depending on the size. I prefer to put mine in before heading to the gym at 250F so by the time I return it is finished.
- Remove from the oven and scoop out contents, careful not to tear the the sides.
- Put contents in a bowl and season with choice seasoning. I used 1tbsp Almond Milk, cinnamon, packet Stevia, 1tbsp almonds, 1tbsp pecans and dried orange cranberries (which are DELICIOUS).
- Mix ingredients and put back into the potato/yam and enjoy!
