Recipe (for protein muffin batter): 1/3 cup oat flour, 1tsp baking powder, 1 scoop Dymatize Fusion7 protein (or choice of protein powder), 1 egg, 1/4 cup Greek yogurt, 1/8 cup naturally dried blueberries, cinnamon, packet Stevia, 1tsp coconut oil. Bake in oven in one ramekin or several muffin cups for ~15 minutes at 420F. When the muffin completes baking, cut a whole in the top and scoop out some of the muffin and fill with yogurt.
