Honey Mustard Glazed Salmon Balls

Enjoying a good meatball does not mean you only have to resort to red meat. This honey mustard glazed salmon balls recipe is sure to blow you away. This recipe is so versatile you can use it in many different dishes, from pasta to sandwiches.

For this salmon ball recipe, you will need the following ingredients. A pound of raw wild-caught salmon, if you cannot find any canned salmon will do the trick. Next, you will need one-third of a cup of red onions, half a cup of chopped cilantro, half a cup of chopped bell peppers, and a tablespoon of garlic paste. Additionally, you will need two eggs, one whole egg and from the other one remove the yolk as you will only need the egg white. You will also need about two tablespoons of almond flour and sea salt and pepper to taste.
Now, for the glaze you will need three tablespoons of Dijon mustard, one tablespoon of chicken broth, two tablespoons of coconut sugar, and one and a half tablespoon of ginger, fresh is preferred but ginger paste can also do the trick.

To prepare this delicious recipe, first, start by setting the oven to 410 degrees Fahrenheit. Now, salt and pepper the salmon and put it on a parchment-lined baking sheet and bake it for no more than 15 minutes. Let it cool to room temperature before you continue.
Flake the salmon with a fork and mix it with other ingredients creating golf-sized balls. If the mixture is watery, just add a bit more flour.
Bake these balls for about seven minutes. While you wait, mix together the ingredients for the glaze.
Take the baked salmon balls and cover them with the glaze. Now bake them again for another seven minutes.

That is it, this recipe should make you about eight meatballs to enjoy.

Honey Mustard Glazed Salmon Balls

Ingredients

  • 1 lb wild caught salmon (raw)
  • 1 tablespoon garlic paste
  • 1/3 cup red onions
  • 1/2 cup chopped cilantro
  • 1 egg
  • 1 egg white
  • 2 tablespoons almond flour
  • 1/2 chopped bell pepper
  • Sea salt & pepper to taste

Glaze:

  • 3 tablespoons Dijon mustard
  • 2 tablespoons coconut sugar
  • 1.5 teaspoon fresh ginger (or ginger paste)
  • 1 tablespoon chicken broth

Steps

Step 1

Set oven to 410F.

Step 2

Place on a nonstick baking sheet or on parchment paper. Sprinkle with a little sea salt & pepper. Bake in the oven for 12 to 15 minutes or until the salmon can be flaked with a fork. Once it has finished baking, all the salmon to cool to room temperature. To save time and money, you can use canned wild caught salmon.

Step 3

In a bowl, add chunks of the baked salmon. Flake the salmon with a fork so that it is shredded in the bowl. It should have the consistency of canned salmon.

Step 4

Toss in all of the ingredients, except for the glaze, and mix together using your hands. Be sure to mix thoroughly. If you find the mixture is too thin or watery, add tablespoons of almond flour until thickens.

Step 5

Create golf ball-sized balls of the salmon mixture and place them on a baking sheet. The recipe should make about 8 balls.

Step 6

Bake the salmon in the oven for about 7 minutes.

While the salmon is baking, in a separate bowl, mix together all of the ingredients for the mustard glaze.

Step 8

Remove the salmon balls after 7 minutes and brush the salmon balls with the mustard glaze using a basting brush (if you have one). You can also try to carefully dip the salmon ball in the glaze but be careful not to break it. Once each salmon ball has been covered, place the balls back on the baking sheet and pour the remaining glaze over them.

Step 9

Bake in the oven for another 7 to 8 minutes.
